Apricot Pork
This sweet roast makes a great slow cooked dinner for those busy days.
Suggested meat:
3 pounds pork loin roast
How to freeze and cook:
Add pork roast to freezer bag.
Massage bag until sauce evenly covers pork roast.
Close bag removing as much air as possible.
Freeze flat.
Thaw overnight in fridge.
Place roast in crock pot with fat side up and onions on top.
Cook on low 5-6 hours or until done (160°F). Rest the meat for a few minutes.
Tip: Large cuts of pork increase in temperature approximately 10 degrees while resting. To avoid dry pork, remove roast when temperature reaches 150°F followed by a 10-minute rest to reach the recommended 160°F.
