Curry Yogurt Chicken Marinade
This chicken is great sliced and eaten with cauliflower rice or on a Mediterranean style salad.
6-8 Servings
Suggested meat:
2 pounds boneless, skinless chicken breasts
How to freeze and cook:
Mix well.
Add meat to freezer bag.
Massage bag until sauce evenly covers meat.
Close bag removing as much air as possible.
Freeze flat.
Thaw overnight in fridge.
Preheat oven to 425°F. Bake chicken uncovered in a shallow baking dish for 12 minutes, turn over, and continue baking for another 12-17 minutes, or until internal temperature reaches 165°F. May also be grilled or pan fried.
To get the juiciest chicken, allow it to rest at room temperature for 5-10 minutes before slicing.
Serve with potatoes, naan bread, cauliflower rice, or on a Mediterranean-style salad.
