King Ranch Casserole

My favorite casserole ever is layers of chicken, peppers, cheese, cream of chicken soup and other seasonings tucked between corn tortillas. Such a good mix between comfort food and Mexican food!

Suggested meat:

3 cups, chicken breast, cooked and shredded or cubed

How to freeze and cook:

  1. Freeze flat.

  2. Thaw overnight in fridge. Let sit for 30 minutes on counter.

  3. Bake uncovered at 375°F for 30 minutes or until internal temperature reaches 165°.

  4. Best when topped with additional cheese, shredded lettuce, and tomatoes. Serve with Mexican rice or chips.
