Minestrone Soup
Delicious, warming soup with a little spice and lots of veggies.
Suggested meat:
1lb sweet Italian sausage links, sliced, raw
Optional Ingredients:
3 cups fresh, chopped spinach
1 15oz can butter beans or cannellini beans, drained and rinsed
How to freeze and cook:
Add meat to freezer bag. Optional: add 1 can drained and rinsed butter beans or cannellini beans instead of meat or in addition to the meat.
Massage bag until sauce evenly covers meat.
Close bag removing as much air as possible.
Freeze flat.
Thaw overnight in fridge.
Place in slow cooker, add 6 cups water, and cook on low for 4-6 hours.
Add pasta during last 30-60 minutes. Add up to 2 cups more water IF needed.
Optional: Add spinach during last 5 minutes.
Serve with Parmesan cheese sprinkled on top. Can serve in bread bowls.
